Staff Hygiene in Food and Beverage department

Personal Hygiene in F&B department:
o    Shower daily.
o    Brush your teeth regularly
o    Keep hair free of lice, dandruff.
o    Do not chew gum, tobacco
o    Wash hands regularly
o    Gargle after smoking and have a breath freshner.
Food handlers must :
o    Be properly clothed in clean clothing.
o    Keep hands finger nails and body clean.
o    Wash hands thoroughly before commencing work, after using the toilet and at other times.
o    Wear water proof dressing over wounds.
o    Do not smoke while involved in food handling.
o    Ensure food is protected from pest and dirt.
Wash hands:
o    After visiting the toilet.
o    After blowing the nose if you are involved in food preparation or handling   of unprotected food.
o    After fingering the nose or face.
o    After handling the garbage or spoiled foods.
o    Before and after handling raw produce such as meat, poultry and the vegetables.
o    Before and after handling different types of food,Eg. Uncooked and cooked  (To Prevent cross contamination).
o    After handling money
o    After tea and meal break.
o    After clean-up.
o    Before handling unprotected food or preparing food.
Hand Washing:
o    Use warm water
o    Always use antibacterial soap
o    Wash for at least 15 to 20 seconds.
o    WASH: Palm, Nails, Wrists, Between fingers, Thumbs, Knuckles.
o    Dry with paper towel or hot air.
Bad Personal Habits:
o    Smoking. Smoking in the kitchen area.
o    Coughing and sneezing.
o    Picking pimples and sores.
o    Fingering food.
o    Licking fingers.
o    Tasting food with unwashed spoon.
o    Scratching the head.
Exclusion of food handlers:

Food handlers must report :
o    Diarrhea.
o    Vomiting.
o    Infected wounds.
o    Major wounds even it not infected.
o    Eye ,Nose and ear infections.
o    Colds and flu.
